Not really a good time to be moving there, but hey...if ya got the itch. If you have already checked the job listing on this web site and found nothing, there are two guys I know of that have their ears everywhere, and if you are good and experienced they could help at no cost to you. #1. Both of these guys are in Fl. They have helped me in the past, with short notice.
Plus you might want to get the bakers e-mail and write him, he's a member here and is a Pastry Chef in N.Y. But--- ok that with George first, don't want to step on any toes. Also the Chef's Assos. in N.Y.C., you can get that by calling any chef in any of the big hotels.

I can relate about it being bad,and knew it was gonna be , but in a bigger city I stand a better chance of working,cause it is real bad here,and I am only 40 miles out side of chi town .After 9/11 I was seeing the writing on the wall,when I was laid off.
Hell, I have been off so long the hair has grown back on the bottom side of my arms!LOL!
but hey ! THANX !!!! I will give them a call & pick there brains.

I have done the Dallas thing before, nice place to visit but could never pay me to live there again!!
I will probably at least go check NY out,I think I stand a better chance face to face,with a future employer.
Another problem ,being ,even if I were to stick around here,is they look at me they look at my resume, and there words to me are "I cant pay you what you are worth",so on the other side of the coin,I feel it would benifit to move to a bigger city where they are not so scared of a resume.
Am I totaly crazy for wanting to move?

no, not crazy. why don't you check out salt lake city, might be something there with the up com'in games and stuff. the hotels and rest's have got to be thinking about hiring more staff. I don't like dallas either, to many texan's.

Salt lake had crossed my mind as well,but being a TRUE line grunt, That may be too easy.
As far as crazy , I think it is just the nature of the beast,as well as the passion for what we do,or we could'nt survive our proffesion's.
As far as texas , well...... it is it's own little world,and hot as hell in the summer time!!!
I tried growing a spice garden ,and could not keep enough water or shade on it!! LOL!!

Since I had been laid off ,I have been working on the docks "long shoreing" of and on ,and i am telling ya, WE are in the wrong profession!!
my take home for ONE day was $200.00 They make good $$$$$ but it is so boring compared to a kitchen,I am not used to moving that slow! LOL!
