I would appreciate any advice on a smart, relatively inexpensive way to begin a career as a pastry chef. I am making a career change after being out of college for 7 years. Is it better to do the ACF apprenticeship or get an A.O.S. degree?
Also, my ultimate goal is to live in So. California so should I move first & attend school out there? Thanks, Caroline

First - Do not go to the school in San Francisco, the pastry program is not that great and if you have the money anyone can get in there.

Second - Be aware that if you want to make a lot of money and have time for a life, do not be a pastry chef. We are not paid enough and we work way too much.

Third - If you have never been in the restaurant business ( the kitchen ) then get into one and find out what you are getting yourself into. Lots of places are not the best places to work at and most do not give you any benefits. This business is like that of fishermen, it takes a certain kind of person to do it.
