Dear readers,

I,m a chef in a restaurant in the Netherlands (europe). We have an french oriented style and use mainly fresh products. Escoffier is still a admired cook, but so are a lot of others.

I hope to start my own restaurant in the future and would like to look around the world for some time to get more experienced.

I was wondering if someone could tell me how to get a job in a good restaurant for about a year or so. I know there are a lot of possibilities as a trainee, apprentice or part-time employee, but I'm 30, with a 15 year working experience and a bachelor in hospitality management. I think that I can mean much more to an employer, but I'll cost more.

And than there are things like working permits etc.

Anyway. There are a few things I want to do over here and hope to come to the USA in 2000 (about september?).
