Does anyone have any thoughts on good restaurants in the Boston area for interns? Looking for something French oriented, with twists. I'm afraid wherever I go I'll end up only tournering potatoes, not that I'm worth a hell of a lot more, but I'd like to work a line. I'd like to learn something as opposed to just doing the normal chores. Maybe I'm asking for too much?

Olives!!! The normal chores are how you get started!! When you perfect those maybe you'll be given the fun chores as opposed to the not so normal chores which you'll have to perfect before you get to do the normal chores again. Besides I like tournering potatoes, it's relaxing.
I'm still trying to differentiate between "normal" chores and "what they are opposed to".
Here is a list, maybe you can tell me which ones are "normal" and which ones aren't.
1. Filleting, skinning, de-boning 12 whole salmon.
2. Making a 40 egg hollandiase.
3. Cleaning the grease trap.
4. 150 omelets to order.
5. De-stemming spinach for 2 hours.
6. Scrubbing saute pans as fast as you can for 3 hours.
7. Cutting and portioning 12 top butts.
8. Peeling 3 cases of mushrooms.
9. Making 40 dozen cookies.
10. Doing dishes all night.
All normal, in this business all are normal; only the help is abnormal!
Grease trap; not normal i.e. punishment
De stemming spinach; $hit, I buy mine de-stemmed

As for doing dishes all night, all the food is out so that means whap back a vodka-cran, crank up some music and have some fun time!!

Order everything
Make/Build everything
Clean everything...including pots and pans and sheet pans.
Clean the tables and sometimes the floor.
I do everything that the probies do.
If I hear that, only once, I'm gonna kick someones a**. Thank You.

You could offer to cook the staff meal. I don't think "good" restaurants are going to put you on the line just because you want to learn something. You should probably talk to the chef about moving around, but most likely, you would have to start with salads or cold appetizers. Until then, grasshopper, wax on, wax off. Lu
Restaurants cook staff meals any more? I thought they warmed up leftover banquet food or sold you food at 10% off!!!
