Make a Simple Syrup and reserve it. Buy frozen purees such as mango, raspberry, coconut, peach, etc... Pass the puree through a chinois into a tall narrow container. Place an egg in the puree, it should sink. Slowly whisk in simple syrup until the egg breaks the surface and looks like about the size of a quarter from above. Add one egg white, whisk, put in the Paco Jet containers and freeze until solid. Spin the sorbet while they are frozen.
