I am doing a party for 350, the person putting this function on has had 350 lbs of brisket donated to her. I do not have a smoker. Any suggestions? I will need to prep the meat ahead and freeze it.

most I ever made at a time was 18 briskets, I just cooked them regular in a covered roasting pan
then sliced them all up, then wieghed them into 4 oz portions and wrapped them all in foil and put them in the fridge. they lasted weeks. to serve we put the portions into a hot dip bath and served as ordered.
