what's the main difference in working between mom & pop restuarnts and bigger, "name brand"?


I ask b/c I'm going into an Italian m&p today to see about work.

I prefer "Mom & Pop" because the owners are right there and you don't have to wait for policy. I once worked for a big "name brand" outfit that wanted total control on recipes, even for specials. The problem was, they were in Columbus and we were in California. It took weeks to get an answer on anything and then they wanted their chef's to cook it up and we all know what happens then.....

When the owners are right there you can get feedback and have a more personal relationship with them (hopefully that's a good thing).

It really depends on the mom and pop.

Can be heaven or hell depending on how you get along with them. There is also much less likelyhood of benefits and stability because things are totally personal, with no overlying organization to keed personalities out of it.

Mom & Pop has it's pros & cons like G said, also, they may pay cash, but you do lack insurance and other benefits, there's a feeling of family and a feeling of making a difference.
With th ebig chains, you are just a number; with benefits and probably more chance to move upwardly.
It just depends on your philosophy of life I guess, I have done both with pros and cons for both. In the end I prefer a Mom & Pop to work for, if you are young, go for the upward mobility and experience

cool... I didn't make it yesterday, but have re-schuduled for Sat. Morning. They own two places here in town and are about to try and open another in a more "upbeat" section about 10 +/- miles away.
I think I'd enjoy the learning experience of the one on one better than just doing the same thing all day long. Anywho... I"ll letcha know how it goes.

Opening a restaurant is an awesome experience!!!!!
Especially if it's sucessful from day 1

Getting opening experience looks awsome on a resume as well.
