Hi, guys, sorry I haven't been around but the new job is all consuming (bet you don't know about that, huh?) Anyway, I would like to buy a genoise knife for my students to use and cannot find an outlet for it.

The knife is 14" long, like a spatula on one side and with sharp teeth on the other. The use, of course, is to slice geniose. I got mine from Sweden about 20 years ago and have not been able to locate any knife manufacturer who can help me, or even knows what I am talking about.

Can you guys come through for me? Thanks for any assistance.

THat description sounds like a bread knife, are the teeth different?

Thanks,Point, for the address. They do have two and one is the right size. The teeth look different though. I will have to check it out further to make sure. You can't imagine how many places and knife sources I have checked for this item.

Jonesg - Yes, the teeth are much like a small saw. That has been the problem. I find the breadknives do not cut as cleanly as I would like due to the moistness of the cake.

Thats interesting, I've never had a problem cutting genoise myself but I usually freeze it to reduce thew crumbs.
