this is one of my most favourite veg's ever. (especially with fish)
but it is what i like to do with any left overs that is really good... and really simple.
just mash up the leftover potatos and the spinach and pine nuts.. add a little fresh chilli and maybe some tabasco and season ... then make in to little rounds and fry till golden.
then eat with some nice sausages and a fried egg.
unbeatable comfort food.
anyone got anything else interesting they do with leftovers..?
