Hello all. I am hoping some of you have a few library hints to share. I am currently writing a syllabus and choosing a text for an International Cuisine course. The text is the hard part. I need late freshman/early sophmore level International Cuisine. Although I have asked those in the education community, I thought some opinions across the industry would be a great help. Let me know if you have some great titles! :o) Thank you in advance.

OK... I need a book or a short set of books that focus on World/International cuisine. I'd like them to be easy to read and use by students who are fairly new in the industry.

TimeLife published a series called "Foods of the World". Each set included a bound textbook with photographs, articles, recipes and a second smaller spiral bound book with recipes and illustrations only. Available in many libraries (not a recent publication but many of the recipes are classics).

You can buy these very cheaply on e-bay. They are a very nice introduction to the type of foods enthic to each country, but on closer examination many of their recipes are not fantastic as a cooking guide. Go with that series for knowledge and information, just don't try to learn how to cook from them too much.
