Well I finally did it. Three weeks ago I officially started a catering business here in Winter Park. I got a partner and a legal begal commercial health inspected kitchen. We had our first event tonight and it was a huge success. It was an easy one, an appetizer only cocktail party for some people to show off their new vacation home. I did some grilled Asian pear-chicken pot stickers with a sweet soy-sweet chili dipping sauce. Cheese boeregs(an Armenian appetizer(Granny's recipe) consisting of a mixture of cheeses and fresh herbs wrapped in phyllo triangles. Smoked salmon crostinis with citrus creme fraiche and caviar. Tuscan crusted beef tenderloin, carved to order with a side of eggplant caponata and grilled Italian bread. And Asian duck salad on endive leaves and gingersnaps. I think I will get alot more business from the cards I handed out tonight. So far we have six more events booked for the summer, which is not bad for only being in business for three weeks. I don't think I will miss the executive chef headaches of the past.

Good to hear about your successfull start. Headaches won't dissapear, they just get traded in for different ones...
