I am currently working in food production for a chef/caterer who has mostly corporate accounts. This is a very BUSY 4-person operation and we all do everything (a well-oiled team). However when it comes to baked items the ball is thrown to me. For years I ran my own small catering business and also supplied local restaurants with pastry items for resale to their clients.
