I am going to Sullivan College in Lousville in June. I will be majoring in pastry arts. I have heard many different things about this school. I was wondering if I have made a wise decision. I would like to know if Sullivan give me a good education in pastry arts, as I cannot afford Johnson and Wales or the CIA.
I would also like to know... I have only had a 4 months of restaurant experience as a server. I have done lots of baking on my own. Will this lack of experience in the food industry harm me. I am 18 years of age and plan to work at a restaurant while in school.

Considering you are starting so young in North American standards, your experience is average. Make the most of want the school offers in class and out of class whether it is directly involved with pastries or not. Stay ahead of your studies by doing your own reading and research.
Try to find a job in a hotel as they generally cover a lot more areas of pastries than restaurants or pastry shops and can afford to do extra projects...but keep in mind that these other experiences can also be valuable. Concentrate more on technical aspects of pastries such as flavours, textures, functions of ingrediants. Don't worry so much yet about presentation as that will easily come with time. To be a good pastry chef you have to know the science of pastries!
