Hello all.... Here's the situation that I am looking into and could use any and all input. I'm currently apprenticing at an established restaurant in the city I live. My wife and I have made plans to relocate in the fall for me to attend Culinary School as well. Complete career change for me. I've been toying with the idea of how to get even more experience with pricing out a meal, menus, etc etc. In the area where I live it's a rather small small community, but rather "upscale" (for lack of a better term) I'm considering setting up a gourmet pizza kitchen out of my apartment that could be ordered only from the community (easy delivery) in which we live. Any suggestions on what I'd need to do so I didn't get into trouble with the board of health? Taxes. etc? I'm sure this is all covered in all Culinary programs, but I'd like to get the "real experience" before the Fall classes begin. I've considered asking the Chef at the kitchen I am currently in if I could "rent" his place on the days it's closed...or possibly even a Church that has a kitchen. Question: Where do I get started? With this not being a "full-time" commitment or large amounts of money to be made, who do I need to contact? - Sorry so lengthy, but I wanted to give as much information as possible. Thank you.
