i would like it to arm future professionals with knowledge about the other part of cooking which is taking care of and being safe in the environment some will spend up to 90 hours a week in for many years to come which happen to have about 1mill dollars worth of equiptment in it that no handbook is given to you to know how to take care of or take preventative measures to be safe around.
