I'm looking for information regarding salaries for experienced chefs/sous in Mexico. Any information or resource would be useful (pref. Mexico City).

It can't be very much or they wouldn't all be working in the states! One of the guys I work with was a chef there, he now washes dishes here (he says he makes one weeks salary in one day here as a dishwasher). Seriously, Good Luck!

$38K plus housing, its prolly a resort type position. I've seen others in S.America and they average $40K plus or minus.
