I just have to get this off my chest.
The cook/owner of the restaurant I work in is always in the weeds, I have never seen anyone that is in the weeds as soon as they walkin... day in day out..I have told him many times that he needs to be more organized.. and his weeds mess my self and the salad guy up.. helping him we get weeded ,
But the funny thing is he can never get to family meal any more so we have begun "eating out" the diner next door, the chinese food place across the street and the deli down the block.. (we cant bring food in because the place is kosher)
SO one day his mother (who lives in the area) see's us coming out and begins yelling at us telling us we are making the place look bad since our own staff doesnt eat the food, we told her, her son as no time to cook..
She goes back telling him how bad it looks for us eating out,,, he shrugs his shoulders and says nothing he can do.. but she tells us we will be in troulbe if she sees us doing it again.. we all just laughed and walked away.. Funny ah

I hired a cook once and he was kind of slow at first as expected, and one day he said to me; Chef I think I'm in the weeds! I just told him; "work faster". It may sound cruel but it works, if you go help they will get used to you bailing them out.
Some people are always in the weeds, they never catch up. They are generally disorganized. The first thing I notice when someone starts working is how they set up their work area, that speaks volumes about the work habits of the person.

Maybe someone ought to clue these folks into the concept of "mise em place". Or a the uncomplicated call it, "the six P's:
Proper Preparation Prevents Piss Poor Production.

Yeah we have nicely told him he needs to speed up,, but he is the owner so we cant be to hard on him..

I have told him he needs to focus more on his work and stop all the distractions...

I am trying to get the waitress's to stop putting calls in to the kitchen during service but it hasn't worked yet..
