This is a new situation for me and i don't know what the situation is in the states, but i was just wodering how everyone out here felt about unionized kitchens.

Personaly, I think that they have a place in larger franchise type restaurants and hotels but I think that the independant restaurant cannot work within the limitations as set forth by most unions for thier members. A kitchen and dining room operate differently than most other types of businesses and do not really fit in with the union ethic's as practiced today in this country.

Remember this is my "personal opinion" and is not shared by those who work within the industry where they are union controlled.

I feel that the boundries set fourth by unions would cripple the small indepedent restuarant owner.
