Does anyone know of a good food cost and control program for the computer?? I am running a small restaurant and I want to simplify things for myself.. Thanks

By Chefmanny (Chefmanny) on Monday, August 20, 2001 - 10:48 pm: Edit

Don't waste your $$$ for a small restaurant, use excel or other comparable program and set it up yourself. The programs that are out do too much that's a waste of time and effort and, on top of that they throw in a 3-5% variance nobody tells you about until you call for support. That means you food costs and other total costs can be off 3-5%, that's a lot if you get a bonus.
Do it manually, run a daily food cost. Read this thread again tomorrow and I'll get the e-mail to this guy in Co. , Miick Rudick, he has a good food cost system, I used it all my life because I always got bonuses, so I thought I was the only idiot doing this 20 years ago!!! It was amazing to see how many people do not do this!!! only 1 person in this seminar did a daily food cost and of course it was a "bonused" chef!!!

Manny,Are you looking for any good cooks your way??

By Chefmanny (Chefmanny) on Wednesday, August 22, 2001 - 07:27 am: Edit

There are plenty of positions in this area all the time. Where are you at? Alot of people don't make the adjustment well to moving and/or living here sometimes, I have no idea why! Their mind set has to be flexible here you have people from all over the world going and coming all the time. It can be trying.!!!

By Shawny on Wednesday, August 22, 2001 - 12:21 pm: Edit

Manny, you wouldnt happen to be looking for any new cooks out there would you??

Calgary Alberta.. Canada.. I have been looking to to get into the states for a while..I did some privite work with Jerry Zucker. He was doing a film down her Rat Race.I tell you the private work is the way to go. His wife and him wanted me to go back to LA with them, but the visa was just taking to long. So I have always wanted to cook in the states..

Hi--freddychef here from ST. John's...I would be interested in finding out more about that food costing packet you mentioned earlier.

Did this food costing package ever get posted somewhere on the site? If not, I'd love to get my hands on it, ChefManny.

Dear Manny,

Sorry to bug you as well, but I would be interested in the food costing packet. We will be opening a B&B and although my husband (burnt out restaurant manger)knows costing from his work in California, I can use all the help I can get. My work fax number is: 434-982-2597. Thanks so very much.

We will be building in Charlottesville, Va hope in May. Anyone interested in doing a cooking class some time down the road? We'd put you & your guest up in a $200/night suite - fireplace & jacuzzi, and ask you to teach a class on Sat and one on Sun. plus what you would want to be paid.

Just trolling for interested parties.

Would that also go for Pastry Chef's too?
Maybe Manny can head North and I'll meet him there. We can tag team! He can do the food and I'll do the Pastry! We may need a couple of helpers, say 30-35, blond, 5'4"-5'7" and built like a southern girl!, get those and you can keep the pay....oh and just so ya know, Manny and I are not Yankee's. LOL.

By Chefmanny (Chefmanny) on Tuesday, January 28, 2003 - 06:48 pm: Edit

I can dig that Spike!

By Egoodell (Egoodell) on Tuesday, January 28, 2003 - 07:19 pm: Edit

That would be cool! Could definately use both of you. Down the road we plan to renovate the two bedroom cottage and you could be both put in there while I sell the rooms in the main building for the cooking class. I'm originally from California so you know I don't care where you come from or what you look like! Could do a dinner class and a brunch class. Or if you could come in November a Christmas dinner class and a Christmas cookie class. As far as the blondes, I don't have any single ones on hand, but with the University of Virginia only 5 miles away, we could drop you off to do your own trolling!!!heheheee
