Just curious to know if anyone may have an idea on how to make savory marshmallows. For instance making a truffle marshamllow, how would you make it savory instead of sweet and how would you make it look, taste and feel like a marshmallow? Is it the sugar that gives them their texture? Or is it the egg whites? Any ideas??

Here is a link to a non egg white recipe but I think what your looking to do would be more like a savory flan or dense custard?

why can't you put them in a mixer and add some liquid and selected spices and then reform and dry them?
just a thought.
