The Head of the culinary dept in my school was at an Escoffer dinner party last nite. Today he tells me that he has 4 chefs ready to hire me as an intern. Now rememeber I just started the program this semester, and while I can cook and have cooked as a line cook, I'm still a novice at real food. I'm flattered that he thinks highly of me but I know that I'm not ready for this yet. I do want to do this as soon as possible to add to want i'm learning and I realise that I'm gonna be a grunt in the kitchen. What I'd like to find out from you pros is where should I be skill wise and what the hell do I tell the Chef so I get the jig? I don't mind scrubing floors or filtering the fryer. It's part of the job.
I'm having trouble giving up a job where I get paid $10.30 hr to study and be nice to rich poeple who tip well at Christmas.

How much are you going to get paid as an apprentice...with some experience????
If it's not worth it economically, you have to make the economic call! Do you have a family to support? Do you live at home? Do you really want to learn the business???
In your heart you will know the answer one way or the other.

Yes I have a family to support. My wife will be getting her Economics degree well before I finish. Money is only going to be a factor for a while. I will take an internship as soon as possible, which may be a year or so out. I also HAVE to have a minimum of 1500 hrs in the industry before I can graduate. I'm more concerned about going in and not being able to pull my weight than the money.

Don't worry about not pulling your weight if you have a good work ehtic; it will come in time.
