I've decided it's time to get into a kitchen and really begin to learn how it's done for real. Besides I miss it. My problem is how do I approach the perspective employer about my skill level or rather lack there of. Mainly because the school I'm going to focuses more on the management side rather then culinary. I want to learn and am willing to do anything and work as much overtime as needed as long as I can get my classes in.
I plan on hitting the hotels for the overall experiance I can get with one. I wanna learn as much as I can and stay in the same place until I'm done with school.
Thoughts or Ideas?

Just found out today that a was awarded a $2000 Scholarship for the remainder of the year.

I'm actually in the same boat. I have one advantage (I think), that I need to work somewhere this somewhere for externship, and I have the option of the school making the contact for me. But I think it'd be better if I made the call myself. Now, what to say ...

It's a departmental scholarship within the HMTA department here at Metro State. We do a lot of functions and such to raise the funds needed for scholarships and things for the department. I haven't yet applied for any other scholarships due to the fact that many require more time within the industry then I have.Time to do some more research into them I guess. I suppose this is a good sign that I may get the full ride scolarship for next year(covers tuiton only)If I hold up the GPA 3.86 for the semester and a 3.33 overall.
As for an externship we are only required to put in 1500hrs of industry work before graduation, as well type 35wpm and 1 year of a second langauge. I can get an intership but think I'd rather just be a paid flunky instead of a culinary intern.

Thank's I'm already using fastweb, most of it is crap. I get a few to apply for through it. Every little bit helps. I just need to start applying for the damn things. I never applied before because I always viewed it as a waste of time.....I guess it's not.
