Hello,
I`m looking for any online reference material or recipe collections dealing with Floridian and or Carribean cuisine or a fusion of the two ..Floribian.
Designing a regional luau menu for upscale Gulf coast resort...looking for fresh ideas I haven`t had already.
Any help is most appreciated.

There's alot of choices. You can go cuban type,puerto rican type,
is that what you're looking for? What do you mean by a"regional luau" Like hawaiian?What have you already done? the plaintain dishes, coconut, shrimp,rice dishes? Would you want to roast a pig? Or is this too not upscale? (suckling pigs are better but small & expensive)Do you want to make any authentic dishes? I have a puerto rican adopted daughter so I have made quite a few authentic dishes. Theyre not too fancy though,mostly"homemade looking" Coco Lopez coconut milk has a website w recipes.

I`m the chef at a gulf front resort on the west coast of Florida,Saturday nights we run a Luau outside on the pooldeck by the beach.
At the moment the menu is suckling pig ribs and chicken in a guava bbq,honey glazed carrots,garlic roast potatoes,....and an assortment of vegetable and fruit displays..salads.
What I want is something that is more in sinc with this region of the world,I get a lot of european guests and want to give them a taste of the locale.
I don`t need recipes per say but they would be appreciated in order to give me some ideas in order to come up with something.
"Homemade" cuisine is exactly what I`m looking for so any of your puerto rican dishes would be wonderful,anything from that carribean part of the globe is what I`m looking for.
