Good article.
BTW it's not just Sysco in the article our own Cheftim is quoted in the article-
"They make up 80 percent of the market and offer the highest margins to distributors because chains and larger institutions like schools and hospitals "have people to study the books and negotiate volume deals," said Timothy Banning, a chef in Ventura, Calif. Mr. Banning runs a Web site and message board for professional chefs called Madchefs.com."

Sysco has a heck of a scam people, they charge the food manufacturers for carrying their products on top of selling the product and making $$$ from selling the product.
It's the same with many supermarkets, the big companies pay for the shelf space, if you or me went to Publix or another big grocery chain and tried to sell them a product, they won't even talk to you!

Sysco's delivery policies are a pain in the a** too. Minimum piece amounts, surcharges for this and that. I know that everybody's gotta make a buck but for cryin out loud they're one of the biggest distributors around. Just another symptom of their monopoly in the business.
Most of the restaurants I've worked for "used to use Sysco" but don't now because of service and delivery issues. Maines is the lesser of two evils in our area.
Couldn't read the article, but could guess the jist from comments and Sysco's track record.
