Does anybody now wath consommé à la neige florence is? I found it in a excoffier book and i dont now what "neige florence" is.

Consommé à la Neige de Florence

Consommé Ordinaire, oude Volaille, toujours servi bouillant.
La Neige s'envoie à part, à raison de 3 à 4 grammes en moyenne par couvert, et les convives l'ajoutent eux-mêmes dans le Consommé.

Soup with the Snow of Florence
Basic consomme, Oude (region)Poultry, always served boiling hot. Snow is sent separately, at a rate of 3 to 4 grams on average per cover, and the guests add it themselves to the consomme.

we dusted snow on top of nougatine, it sat on top of mocca mousse'
made everyones mouth numb. LOL!
