well, the 1st week went by and on the second day of class a 12" water pipe broke and flooded the basement of our building. Evacuation of the entire school was needed, and they shut it down for the remaining 2days(thrus. fri.) So, I am now one week behind in my sanitation and basic food prep classes.
Week2:
All went well, made it to sanitation and FP. Sanitation is scary!! lol The instructor takes everything to the extreme so she makes it like you don't want to eat any food, ever again.
Food Prep went well, we made up for missing last week by going over 5chapters instead of 2, but it's a six hour class, so it wasn't too bad. Start in the kitchen next week.
So, all is good so far. I think things will be very interesting, and hopefully fun(other than the amount of homework)
Spike, hold off on the quizes just yet... haven't learned enough yet! ;)

hope they start off with the mother sauces like my school did, those are fun.

Sanitation is extremely important. Nothing can close an operation faster than a public notice about food borne illness. Not great for your career either.

naw, I was gonna come work w/ you Corey! lol

Week 3 and we finally hit the kitchen. Made some basics: Spicey fried chicken strips w/ chipotle bbq dippin sauce(yummy!!)
Ratatoullie: was very tasty, but the eggplant seemed to be a bit mushy; so i didn't like the texture it brought to the dish.
Beer batter onion rings... speaks for itself
and ofcourse, steamed rice... '' '' ''

That seems to be the only class that I really enjoy, for obvious reasons. The sanitation class if really interesting and my instructor brings some laughter into it, so it's not too bad. Then there's the management class... boorrrinng!! lol
Been so busy that i havn't even been able to check my email in a week.. yikes!

the buufet I work at get a better turn over than McDonalds sometimes.
Ratatoullie? extra rat, not so much toullie...

basically it's sautee oninion, garlic, red&green bell peppers, zuchini, and eggplant. Toss in some salt/pepper TT and fresh basil. Simple dish, that has some really good flavor, but again, i didn't like the eggplant's texture. Maybe the recipe should call for the eggplant to be added in later than the rest??

I bet it does turn over better than McD. Tons of people eating there, afterall, it's a buffet. :D

Students, go to Grwall's web site:
