I made the jump about 8 months ago from a mid sized, family owned "upscale casual" restaurant to quite probably the largest hospital in town (300 beds, plus a 70 bed children's hospital and a 50 bed rehab center). Just wondering if anyone else out there had decided to chuck the late hours, always working weekends and holidays in exchange for the Monday-Friday (except every 6th weekend) usually out by 5:00 pm life?
If so, what kind of experience has it been? Do you miss the hustle and stress of the line on Saturday night? Did you sit around your house the first couple of weekends you were off feeling guilty and not knowing what to do with yourself?
Overall I am happy I made the switch. I get to see my wife and kid, while they're awake! I am not setting the world alight on the culinary front, but I am definitely learning a new phase of the business.

Everything you say is true Mike!!!!
I did that about 15 years ago before teaching, it's a Culinary cultural shock, but the lifestyle is definitely for the best, especially if you have a family!

What kind of program do you teach in. Culinary, obviously, but is it a Vo-Tech, community college, university or what? Teaching is something I have always kept in the back of my mind. But after interviewing some of the students at the local culinary school over the years I wonder if I really want to teach there....then again, it would be a challenge!
My problem is I would probably get fired for engineering "too real" of a practical exam. You know, walking around arbitrairly turning ovens and burners up or down, hiding the students' mise en place, switching out nice ingredients for for rotten ones to simulate delivery screw ups, unplugging the fryers, switching student's projects at the last possible minute, catching things on fire, etc.... You know, bring a little realism to the culinary school kitchen.
Hmmmmmm, teaching could be fun......

It's a Vo-Tech Center with a high school attached.
I have adults and high school kids!

It's definitely a challenge, it's fun, rewarding and yes, it sucks sometimes but, the good times definitely outnumber the bad!

I teach adults in a vocational community college. There are time when it annoys the hell out of me but generally it's the most fun I've ever been paid for.
The PIA's come and go but the jewels stay in your mind forever.
