Has anyone tried Humboldt Fog. It is a goat milk cheese with a cental layer and outer covering of vegetable ash. There is a small cheese shop in Denver called " The Truffle"(website is www.denvertruffle.com, they mail order)that turned me on to this cheese. Now I am addicted. It is made by Cypress Grove Chevre in Humboldt County, Ca. If you haven't tasted it yet I strongly suggest you try to get a hold of some.

Yum, yum, & yum again....

igourmet.com carries Humboldt Fog, along w/ a gazillion pages of assorted goat cheeses. I've found their quality, transport packaging, & shipping speed to be stellar. &, if they are out of 1 lb. wheels of brie, they upgrade you to a 2 pounder, gratis. Hard to beat that.

Vegetable ash is just that - though don't ask me which vegetables.... By-product, I suppose, of incinerating veggies... Works well as a moisture barrier, w/o imparting a distracting flavor to the cheese. It aids in humidity control, if you don't want a mold rind. Other things can be employed similarly (cocoa, coriandre, cinnamon, herbs, pepper - you know the drill), but they flavor the cheese.

What does this cheese resemble in comparison to other cheeses as we have a creamery here that makes several goat milk cheeses. They have the best cream cheese i have ever had and the feta is absolutely the best!

It is similar to a Laura Chenel goat but is creamier and milder. It has a layer of ash. Very nice, not too strong, but makes a statement.
