Hey chefs, life is good for me out here in Colorado. I am really enjoying not being an executive chef. I forgot what it was like to not be worried and hurried ALL the time. I have been doing the private chef thing in Aspen 2-3 days per week and taking home as much money as I was working a 70 hour stress filled week. It's much easier cooking for 4-10 people than for 400 people. I am getting a private chef thing going here in Winter Park. I have a tasting party tomorrow night for the local high end vacation rental company which I hope will get me alot of business. I have partnered up with a woman that has a drop off catering company here and have full access to her commercial kitchen. She will incorporate me into her website and offer my private chef services along side of her drop off services. The best part of all this is that I have lots of free time to ski!!!!!!!
