You are so correct. Most of us are probably not good typers anyway. Two or three fingers for me so sometimes we keep it short. Definatley not the same as a phone call.

I was just looking around the site to see if there was anything new I could pick up on or any simple stuff maybe I could answer.

Dont even remember why I quit posting before. I think I do things in phases and then get bored. I do remember though that there was one or two posters that would just constantly dog ya on everything you posted. Anyway it seemed that way and that can get old. Everyone can sense when they are not wanted even if it is text.

I wish I knew everything but I dont. I would be thrilled to share what I do know with those who are even less experienced than me and am confident I could scan around and pick up some stuff from the real pros out there.

I wonder where Hanz and Gerard are these days? They posted quite frenquently in the past and were very informative. Hanz hooked me up with Jack Daniel's BBQ Sauce for fish and it remains an enormous hit at the club today.

Through this forum I was able to make arrangements with Gerard to meet him in Boston by the trolly at his bakery and he gave me a very nice piece of Marble counter top. Heavy as hell. Spent a few days at the CIA while my wife and youngest shopped, headed for Boston and we all met Gerard. He even hooked us up with some awesome pastry. Doesnt sound like much but its a trip I will never forget. The marble is still in the kichen here at home and will be long after I am gone.

Stress is at work. It is a four letter word ya know. Sure dont need stress on a simple little forum.

Were all chefs so we must all be right. Or at least never wrong. Just ask us. Ha Ha Ha.

I sure do want to welcome all the old posters back if they are still around.

I don't know what happended to Hans but Gerard is back around again and has been for a while. He posts as Jonesg.

Everything goes in cycles, heck I've been lax in participating around here myself. ;<)
