o.k.im a training chef in new zealand and i've got national competitions soon.one of my dishes is a beef dish and i would like to use a green coffee sauce.Does this exist?can you tell mehow to make?

hiya mike.
i study at the universal college of learning in palmerston north.it's funny you mention that you're a pastry chef because i recently had my placement in competition's changed.I had to drop the beef recipe(green coffee bean sauce) for the team skills.
the dessert part of this we are doing a kikorangi cheese stuffed tamarillo on a pecan praline and i wondered if you have any suggestions for aan intersting garnish or sauce.you're help would be much appreciated.
