Just a simple question: Do you think political adeptness or better culinary skills will get you farther in a large kitchen?

Definately political adeptness, but I think that's the case in all fields. You have to know how to get what you want and need done. But if you step on too many toes doing that your skills won't matter because they'll find someone with skills who pleases them.

A head chef needs to be a leader more than a great cook...I'd rather follow the guy who admits he doesn't know how to make everything who can manage the enviroment of the kitchen.

In my kitchen I am the exec chef and I'll be the first to admit that I can't bake or work the broiler station worth a shi-. The key to my success is the fact that I surround myself with super talented people and I know how to get those people to do what I want them to do. The way to succeed in this business is time management and people management. You have to know how to give people what they want while they fulfill your needs at the same time. Being able to whup ass on sautee does't hurt either.
