I recently purchased a new 6 piece set of Global knives... Unfortunately the box and documentation was not available to take away... Wiping with clean water and proper drying is esential... Which stone (water Oil) or steel is best for these knives...

If you visit www.northwesterncutlery.com, they have some info on their site on care and feeding of Global knives. I'm also sure that you could get some expert advice from them about sharpening.
