Does anyone have any good recipes for freezable potato side dishes? My clients love potatoes but I feel limited to variations of the standard mashed potatoes becasue of what happens to them when they are frozen. Is there some trick in the cooking process that I am missing?

I have a homemaker type of recipe that uses frozen hash browns or similar that's actually rather tastie...would that help?
I've made twice baked with cream cheese, cheddar, sourcream and seasonings and they froze ok...I think I made them moister with the cheese than usual so the potato didn't have that dry texture when reheated...is that what you mean?

Twice baked sound as though they would work. My potatoes did not do well in frozen adn then reheated stews (their texture was mealy and they turned brown).
Can you make scalloped potatoes and then freeze?
