I have the opportunity to enter an ACF run culinary salon (competition) through the Western Restaurant Association in August. I just found out that my coach will be Bo Friberg, which is very exciting. Does anyone here have any tips, pointers, warnings, or just general comments about these types of things? I'll be entering in the breads and pastries sections.

Do your best, learn as much as you can, have fun, and don't get too tied up in the outcome. These are all subjectively judged, and you may not have the luxury of knowing what your judge(s) are going to be looking for on that particular day.

Bo is a great chef and teacher. My girlfriend had him when he was teaching at the CCA. Best of luck.

Enjoy the event and, like he said, don't take it too seriously. Look at what the judges look for and how they award points. Take lot's of notes and pictures. The pictures I took at the show in Berlin in '96 still make me pause.

Where is the event being held?
