I am looking for a formula for type of cookie.

The kind they sell in like all the italian bakeries...

they make many different kinds of cookies out of the same dough base..

I think it is a Spritz type cookie dough but i am not sure..

any ideas. or formulas?

hmm, Spritz?

Spritz Cookie Dough

Almond Paste 12oz
Sugar 6oz
Salt 3/4tsp
Butter 12oz
Eggs 4.5oz
Vannila Ex 1tsp
Cake Flour 6oz
Bread Flour 6oz

Total wieght 2lb 1/4oz

Mixing - Creaming Method
Blend Almond Paste to a smooth soft paste,
with a little of the egg.
Add the butter and Sugar,
and cream as in basic procedure.

Makeup - Bagged Method
Bag out with star tube to desired shapes,
(small) on parchment sheets.

Baking 375o F
