Hi..Im Toni a new girl here. Looking at American Couvertures. Found a Semi that I like, but all the milks ar eso dark...I want a light product, one that immediately says "Im Milk Chocolate and I rule!" I hear Peter's sucks lemons. The semi I found with a mild, inviting color, not offensive to milk chocolate lovers like myself, is Guittard French Vanilla. Every time I see Callebaut and Cacao Barry, I remember the time I bit into a French, un-enrobed truffle...sickening! One box that was about the size of a quart of milk weighed about 5 pounds, and eew...gross!

Any pointers?
