I know there are places that have the small tarlet tins but they tend to be cheap alumanim

There is a hardware store here in San Francisco that has all sorts of shapes, sizes, etc. Why a hardware store carries em? I dunno. But they have cheap Asian pans, AND the heavier French ones. If you have problems with supply I will see if they are still in business and ship you a box of em. Their prices are better than sysco, but that doen't say much does it?

I was looking for those very items myself just last year! Found 'em at a local 5 & 10. But...
Online good places include: bigtray.com, jbprince.com (yeah, Spike. love 'em too!), & surlatable.com. Prices sure can vary depending on where you look. Good luck!

The trailing went well

But they have decided to go with adding 2 people instead of 3 that they had planned, I was the third person so...

The chef said if they find it does not work out well with just the 2 I will be the next on the list called in...
