Ok, so this lady has requested me to make a Chocolate Mousse Cheesecake. All I see on the net is blasted Cool Whip Recipes...and I forbid myself to work with COOL WHIP>>>>EEEEKKK. So...does anyone care to share a recipe with perhaps real whipping cream, cream cheese, and melted chocolate? I have this recipe in my head but I can't find it on the net. Thanks so much... Pamie

Why have I not heard of this?
But, me thinks that maybe if you incorporate
ganache' into your cheesecake mix, THEN fold in very heavy whipped egg whites, it will produce a very rich moussy product.
I would bake them in water, with a lower temp. say....335 F.-350 F.
Ummmmmmmmmmmmmm.......makes my mouth water.
I think they may rise fast too, but don't under bake, cause it will make them fall.
just some thoughts.

Thank you... I will try that tomorrow. I use 2 eggs in my cheesecake recipe, so I think I will separate them and try your suggestion of whipping the whites. The idea of Ganache'...sounds interesting. I will try that also. It's funny though, because I had a lady order one of my Chocolate-Buttermilk Cakes with fresh Raspberry filling. Well, I am pouring a creamy Ganache' over that to seal it and topping it with fresh ediable flowers. I just didn't think of the Ganache' in the cheesecake. I have to make it tomorrow and I will let you know how it turns out. And...I will send you a piece... Tee Hee Hee.... Thank you Chefspike for your help...

add egg whites to the recipe, use your whole eggs just as your recipe says, and whip added whites. does that make sence?
whip the same amount of whites as in your recipe.

dobos, flan (fruit)or cream, that's easy.
Viennese pastry, 5-7-9 layers that's tough at that hour.
Or a wedding cake that has to be done by morning, so you can transport it, that's another bi**ch.
Sugar work when your tired is a pain too, even nougatine as simple as that is.

As promised I sent you both a slice of Ganache' Chocolate Mousse Cheesecake. It was sinfully delicious Spike...and thank you so much for your help.

I send you both slices in your e-mail's and if you both like that well... a whole pie. Tee Hee Hee... By the way, I got your e-mails thanks to your profiles here in this forum. I hope you don't mind, but at least Spike wanted a slice and well, Corey...I think he got confused about the Mouse verses Mousse thing. *Giggles*. Just kidding with you Corey... Anyway...I had to send you a slice and let you know it turned out. I added ediable flowers on top with a special topping I make...

This recipe was a "HIT" with the lady that ordered it. In fact, I made two...and sold the other one too. A cool 65.00 bucks. Can't complain about that... Who knew? I will make it a regular in the menu here. Again, thanks so much. Pamie

Oh my... It's no big deal - really it's not. Chef Spike hasn't even seen the photos...or didn't get his mail...or ...hmmmm...perhaps don't want to endorse it. Scarey thought. I just made a Cheesecake...and promised Chef Spike a slice for the help. To funny. Ok...well...I will try to learn this through the formatting. I am really into the ediable flowers right now...and they are a hit on any cake or pie not counting breath taking salads.
