I am with you all the way. I have done the 14 hour days six days a week for several years, am 45, and have just realized in the past several years how much I miss "my" life. Ten hours a day is plenty, six days a week is plenty. I do not work without a day off anymore. We grow old fast enough as it is, no reason to make it happen quicker.

Live your life now.

When you burn yourself out working crazy hours the first thing an employer will do is fire you and replace you with a new culinary grad.

No matter how loyal you are to an employer you are just a tool to be used and disposed of when worn out.
