George Brown College Chef's School in Toronto is beginning a food stylist's course this year, both full-time and an intensive course for those who work in the industry. Professional advisory committee and photographers. A portfolio of your work from the lab work (8-1/2 X 11 - colour) is given at the end of the course.

Hi!
I'm a writer, and I'm currently working on a novel in which one of the main characters is a professional food stylist. I wouldn't want to divulge any of the 'top secret' trade secrets, but I would like to know if there are any basic tips that I could use in the story to add a touch of verisimilitude to my character. For example: how do you make broccoli or lettuce look crisp and moist after it's been under photographer's lights, or how do you create the illusion of sizzling beef for a photo shoot? Also, I might want to mention what school she took her training in, or the name of a professional organization, just to people know that the skill set is part of an entire culture and organization of trained pros.

Hi Trudy,
I've done a little styling for local rags. There are lots of tricks like torching the turkey for browning, colored shortenings for ice cream,
plastic ice, plastic veges sprayed with veg coating, dry ice.
I would get local papers and search for local bi lines from food stylist, contact them, they will probably let you join them.

Hello from Madison, WI. I am playing food stylist for a day for a commercial shoot, as a favor for a producer on a low budget. I am simply a caterer and have a great eye but not for what may look good on video... I am looking for quick tricks of the trade. Help anyone? Please, The shoot is this Friday!! I'm "serving" a ham, pastry, breads, fruit and fresh squeezed O.J.
