I hope I don't start a riot with this question, but, I was looking thru a eval copy of a cookbook I was given, and came across a section of recipes for Pidgeon, it is a buffet/catering cookbook, I think this is really wierd, I live in Las Vegas, where the "flying rats" are plentifull. but I think if some chef served them on a buffet, the guests would riot. Any ideas or comments on this?

The pigeons your cookbook refers to are not those "flying rats". Those "flying rats" are actually Rock Doves, not pigeons. And why is it that you never see a baby pigeon?

In the south, if it flies, we eat it. The gamier ones, take the breast ,wrap it around a jalopeno and secure it by wrapping outside with good old fashioned bacon. Marinate these for 1 hour in your choice and grill. Boy! can't wait till dove season! I don't partake in the hunting, but I sure like to eat em.

Hey Panini- the first time I heard of something like "beercan chicken" was when I had a few quail to grill. The Saute Guy where I was working at the time (@1982) told me to soak the breast/leg portion in cheap beer with fresh thyme and garlic, then throw it on the barbeque. It turned out fantastic. Haven't tried the chicken method yet, but I will before putting my BBQ away.
I don't bird hunt, but many of my customers do which is the next best thing. Living in rural Idaho, wild fish and game are as common as store-bought meats. Want a free elk dinner? Get locked up in the Custer County Jail. They feed the inmates roadkilled elk and deer!
p.s. Doves are so tiny they still remind me of eating mice.(Reminiscent of "Never Cry Wolf).

Ya know I didn't want to tell you that we marinate those jalapeno doves in beer, I knew I would probably get some flack.
I actually fish the tanks while my buddies dove hunt. We field dress them , do the jalapeno, bacon thing right on the back of the truck. 4 cans beer, 1 habenero,a couple of riceroni packets in a bucket, throw in the dove. Start a fire, put 6 dove in a foil ball,throw into fire. drink beer and eat dove ,play cards and sleep under the stars.
Try that beercan chix, but make sure you close the necks so it steams, eat right away.
ps. have gotten many shot showers while fishing.
