Does anyone have or heard of Chesapeake Chicken? Apparently from what the client described to me it sounds like a roasted or grilled breast of chicken, topped with a crabcake and some sort or sauce, she wasn't sure what kind. I have done some recipe searching and I found something very similar that was a pounded chicken breast stuffed with a crabcake like filling and then topped with a hollandaise. I think this will probably fill the bill or I can just adapt it to their liking, but if anyone knows of or has a diiferent recipe I would greatly appreciate it.

The Chicken Chesapeake I use to serve was a pounded and baked boneless chicken breast topped with room temperature loose backfin blue crab, then topped with a Mornay sauce (not too thick)(a heaping teaspoon of a backfin or lump crab is better than a tablespoon of regular crabmeat with shells). Then lightly browned in the oven. We use to sell this to a lot of weddings.

Thanks Norma! That sounds about right. I checked again with the client today and ran it by them and she even said she couldn't remember whether or not it was an actual crab cake or if was like you described, so I told her thats what we were doing. Thanks again for the help.
