I really need some input from you wonderful people. I have to cater a party monday morning and while we usually do just the continental thing, they asked for some kind of
egg dish. I gave them the proposal with a nice sausage and egg casserole. She
accepted the proposal, but now wants soemthing with bacon...any ideas? Has to be
pretty fool proof as it'll be my first time making it. Something that can be made on Sunday and baked off at 6:00 am on monday morning...There will be 19 ppl. The additional menu items are assorted breakfast pastries, bagels, fruit platter, coffee, juice......Help!! Thanks all so much

how's about a quiche? simple and delicious...make one with bacon and some plum tomatoes...fresh herbs...what could be tastier?

If you are a first-time quiche maker, I might leave out the plum tomatoes, (no offense,bratgirl), because it just might be touchy, with the extra water from the tomatoes. Try a basic Quiche Lorraine, but I substitute another, lighter cheese for part of the Swiss.

You could also do a strata. Bread on the bottom & top. Put bacon & cheddar in the middle and cover the whole thing with an egg/milk mixture. Season and either finish off with corn flakes or more cheddar on top. Really easy and holds well. Cook in a normal 2" chafer pan.

Thanks all. I appreciate all the help. I make yummy quiche so not a big problem....they dont want quiche though...that would have been too easy for me :) and we all know these last minute things can never ever be easy. thanks again
