Hi, Stumbled accross this forum in search of a used kitchen/vending truck-van. I just retired (20yrs) from the Navy and have tested the cuisines of the world, I always would duplicate them for family and friends upon return from 6 and 8 month deployments to the wester pacific, mediteranian, Indian Ocean, Persian Gulf, Adriatic and northern europian regions. Ive attended food festivals in Lignano Italy, tested street venders in Salsburg Austria, Philippines, Hong Kong, Korea and Mombasa. Dined in Marselle and Cannes France, Melborn Australia, at the Sea of Galilee, etc.. My passion for the cullinary arts is never quenched so why a food truck? My Idea was to start out small and work my way up to resturant/catering once I figure out the buissiness. Any insightful info any of you may provide would be helpful, and yes, I would have all licences and State and local requirements satisfied. Now, with that said, How do I get started?

That's a tough gig BC, temps are hard to control, product is mediocre at best....ect. (If you mean roach coaches)
If you are going to do this the best thing is a metro van with a kitchen and actually cooking on site, some utility cos. use these vehicles in emergency situations to feed crews of electricians, firefighters, emergency relief crews etc. You can bid/sign up for this in the local area you are at. It can be a good thing if you have a good product, not necessarily fancy, just good!!!
