Hi, to anyone out there:
A friend just asked me to help re-design his catering menu, including formating his existing menu, pricing and developing new recipies and such.
I have been working in the catering industry for a couple of years since i graduated from culinary school.
My dilemma is how much do i charge?
Do i charge per menu item?
Do i charge per hour of my labor?
Since it's mostly a desk job at first how much should i add to my normal hourly rate?
Is there any gidelines i should follow?

Charge per hour.
If you already make an hourly ask for a monthly or weekly bonus as long as it takes to finish.
Sounds like HE/SHE should be doing most of this work anyway, and he may not want to pay you if he doesn't like what you give him. If you charge by the hour there is less chance of YOU being held responsible for content he doesn't like.
This is a tremendous task, AND chance to show your stuff.
