Ok all, I just started my private catering company, I have searched up and down, and created a nice menu, my prices are fair yet profitable, and great tasting,, but how does one get affiliated with a catering hall, since most of the ones around by me all do catering anyway how do i get them too rent me their rooms and use their kitchen without them taking all my profits... look foward to reading some excellent ideas

First, ask! See if they will do it.
Then ask for how much?
If they do cater though, chances are they won't let an outsider in.
Find some that do not cater and ask them also.
Maybe plan to move into one when they move or go out of business if this is the norm in the area>

most halls will not let you cater without
liability insurance or a foodservice permit.

I own a hall and I know I wouldn't.

Most will want 10% of food and beverages.

Carl, what's your opinion and/or experience on a kickback to the hall owner/operator from the outside caterer. Post on the referrals/kickback thread if you would.
Thank you

Even the IRS gives a little kickback once in a while, remember the child allowance a couple of years ago?????

By Chefspike (Chefspike) on Friday, February 20, 2004 - 11:35 pm: Edit

that was called a child tax deduction.
and i wish they had that for dogs.

That was not a kickback that was an advance on the next years tax refund.

For an advance on that year's vote!!!!!

Ya, we'll all be better off when baby bush gets the legislation passed to get foreign nationals in to take all those 20K a year, 60+ hour a week executive chef and pastry chef jobs out there that employers can’t fill.

Oh those jobs aren’t here yet, now there 45K++ a year jobs filled by guys and gals like us, but soon as bushie gets his way any jobs he cant export for cheaper wages he’ll bring in former illegals to fill, so his corporate cronies can increase their margins.

(sorry breaking my own rules here, but this really scares me)

By Chefspike (Chefspike) on Tuesday, February 24, 2004 - 09:31 pm: Edit

it should scare you.....should everyone.
you should see the flood here in LA. CA.
no drivers licence.
no insurance.
you wait and see, there will be 15-20 million mexican illegals here by 2010.
and all of them having babies, so they can't be sent back.
and that goes for the rest of the world who wants to come here, and have babies so they can't be sent back.
poverty will rise.
crime will rise.
and the people that want this won't be touched by any of it.
it's sick.
it's a stupid plan, and idea, one that needs to be shouted down by the people.
there won't be any jobs, 20k or other wise.
and then we have to listen to someone like Kerry on top of all of this.
with his bandaid purple hearts, and his holy-than-tho attitude.
him and that fat, drunk, killer Kennedy.
and that Clinton women, good God help us!
hell in a hand basket.
hell in a hand basket i tell you.
