Hi all. I could definitely use some help here. I'm doing my first larger catering job and I need help estimating food amounts. It is a casual summer luncheon buffet reception (all vegetarian). There will be stationary hors d'ouerves of crudite with a dip, toasted pita chips with hummus, crostini with a tapenade, and stuffed grape leaves. The luncheon buffet is penne pasta with pesto, two types of salads (baby greens with cheese, nuts, and fruit), and assorted breads. The reception is for 90 guests (I'm sure a small amount for most of you all, but I've been doing mostly dinner parties.) Any help you all could offer on how much food I should plan on per person would be great. Thank you!!!
