Scrambled Eggs in Aluminum Pan....

Please help. I am catering 4 drop off breakfasts on Tuesday (Aug. 3) and all of them get scrambled eggs....how do I keep the eggs from turning green in the aluminum pans (they will be over sterno)??? I have tried parchment, plastic wrap, & wax paper to line the pans, all to no avail....any suggestions??

lemon juice!
add about 2 lemons worth for each 6" hotel pans worth of eggs before cooking them off. i usually use a 15 dozen carton of eggs per 6" pan and 2 lemons has always kept the green away.

I have heard of this problem but have never experienced it. I have run breakfast buffets and have never seen eggs turn green. They have been in plain hotel pans and enamel lined hotel pans in chaffers for an hour and no green. So I say to myself, SELF, what would I do? (sorry for the reference to you know who) I have always added a bit of sour cream to my eggs just when they have finished cooking, this also keeps them moist in the pans as well. Another thing that might work is instead of parchment or waxed paper line the pans with pan release spray (pam)an leave a vent hole in the pan tp let steam escape. I hope this is some help and let us know how it works out.......maybe even run a few tests to see what works best!!

We have a breakfast buffet for 100s everday and we use liquid eggs from a carton. These eggs contain a small amount of citric acid to preserve them which would relate to adding lemon juice and I have never seen them turn color. These are cheaper to buy and you don't have to crack all the eggs. Good luck

Chris took my answer:) He's right, though. The pre-cracked eggs are the best thing since pre-sliced bread, and they won't turn color.

chefgibz... do you tell the people you are serving that there's sourcream in the eggs? I hope so, cause if my g/f came in there you'd have a lawsuit as she is highly allergic to sourcream. Just letting ya know :)

well that is not entirely true. unless the state in which you do business requires a listing of all ingredients posted at the buffet, a caterer cannot be responsible for someone's food allegy.

that is the problem with the country, everyone wants to sue rather than take personal responsibility for their own safety...

if I am allergic to something, i am going to ask. I bet if your friend cares about her health, she would inquire rather than assume that since there is not a big sign saying, "WARNING, SOUR CREAM IN USE", she can just chow down on anything on a buffet...

a responsible caterer will send a list of ingredients with the event manager so the question can be answered truthfully and accurately.....

so, with that said, allow me to chastise you, snuff, for perpectuating the ridiculous notion of LAWSUIT for any occasion.....

now now... I wouldn't sue over nothing or for any little reason. I disagree with that, and feel it is waay over abused in this country and probably the world over.
However, I don't know too many people that would ever think sour cream to be in their eggs. I also didn't even notice that this is in the caterererererers corner. lol I suppose that if the event was being catered, the people would have said something about things they are allergic to or do not want at all. At least they should.

Hey Snuff,
This was put in place by the Exec. that I had worked under there. It is a 5 star/diamond hotel and it was in use for two years before me and two years with me and we never had a problem. And I do not know of any state that has a law that states a facility to state ALL ingredients on a menu or buffet. Besides I know of alot of places that use many different items in all their food that not ALL people would think was in the food. That is why they should ASK first. And the wait staff was trained well enough to handle a situation like that if it did occur. As far as the lawsuit thing................pure B.S.........America has gone way toooooooo far witht he whole lawsuit thing. Sue McDonalds...it makes you fat. Sue Marborol it gives you cancer. Sue Colt their gun killed your son/daughter. Why not sue ford for a drunk driver driving in one when they killed someone. Or the weather channel cuz they did not correctly prdict a tornado coming your way and your house got ripped apart. Or the local pool cuz they used too much chlorine in the pool and it hurt your eyes. Comon man, when do we as a nation stand up and live and act like we used to. A nation of respectful self reliant individuals in the prisuit of a dream and not the easy way out, and stop blaming everyone else for the wrongs that we ourselves commit????????????????? Just letting YOU know!
