I have been using a rub for prime ribs and top rounds every week that I learned out in Napa valley and have been getting some great reviews on it. It consists of pureed anchovies, garlic, dried thyme, fresh rosemary, parsley,sage, chili powder, s&p and oil. When I am out there carving almost everyone asks me what's in the rub. It's great to see the look on thier face when I tell them the main ingredient is anchovies.

I worked at a restaurant in Yountville call Piatti. I got to work for a great chef by the name of Peter Hall. I learned more in the year I was there than the previous seven years put together.

hey that sounds great! I am going to try this, can you give me a closer recipe of measurements of each part of the recipe.
